FROM THE KITCHEN

A Selections from

The House

Culinary Director Chef Surender Mohan curates an extensive menu that spans the entire breadth of India’s culinary traditions — from the royal kitchens of Old Delhi and the tandoor-fired breads of the Northwest Frontier to the vibrant coastal flavours of Kerala and Goa. These are not merely dishes; they are invitations.

Each preparation is an act of remembrance and reinvention, carrying the warmth of generations within every carefully crafted element.

Old Delhi Butter Chicken

Char-grilled chicken simmered in a rich tomato and fenugreek sauce, reimagining Old Delhi’s iconic butter chicken with depth, warmth, and finesse.

Kerala Style Beef Uthappam

Tender beef, roasted coconut, curry leaves, black pepper, and the distinctive warmth of Kerala’s coastal spice tradition.

Tandoor Lamb Chops

Succulent lamb chops marinated in yoghurt and aromatic spices, finished in the tandoor to perfection.

Chandni Chowk Ki Aloo Tikki

Crisp potato tikki served with spiced white peas, creamy yoghurt, and a vibrant medley of tamarind and mint chutneys for a bold, street-inspired elegance.
